Who has come between us?...Welcome to the World little man!

Not that I was ever very reliable about meeting you all here, but for those of you who have noticed that I nearly completely disappeared for awhile... I thought I might show you just who it is,  that has come between us!

Meet this handsome little man right here...


For the last 4+ months we have been getting to know the little miracle guy we already loved so much!  We weren't able to have any professional newborn photos done, but I knew I had to have something. I thought I would share with you the little mini session we had on the living room floor with my iPhone!

Kudos to the pros at this!  Newborns make you work at photos!  He was very alert from the beginning, even at the hospital (possibly because he was a week overdue); so open eyes were easy.

Summer Catch-Up

Well, it has been a typical June around here, maybe even a little crazier!  I don't even have time to make this real long (luck you) so I'll just pass along the highlights of the last month...


*We canNOT keep up with the garden... cucumbers, squash, tomatoes (I do a pretty good job of eating these up), green beans...




*I gained a sister!

*I turned 30! WHAT!? ~ I'll never again be in my 20's ///

*I have spent one week at church camp and Brett is on week 3!

*We have our final walk-thru visit for Foster parenting next week!!! (prayers please)

*We have new puppies!!!

Happy 2 years Brett {& our wedding story! (with pictures)}



April 30th, we have been married for 2 years!!!

I realized I haven't officially shared any details from our "wedding!"  So 2 years later, welcome to our wedding story!

I was on month 4 in Central America when I began to feel like God had something a little different for me planned.  Read that part of the story here!   and here!

So the plan was made, we would get married the day after I returned to the states.  Once the "when" was decided, the how & where, had to be lined out.  My team was traveling through Los Angeles, CA on their way to Asia.  Since that's where I would part from them, Brett decided that he would meet me there.

Some details took some creative thinking, after all, I had been living out of a backpack for 4 months, not exactly the "wedding preparation" we generally think of!  However, I was never picky about wedding details and had always assumed I wouldn't have a very extravagant one (if one at all) anyways!

-My wedding band was taken care of b/c it came as a set when he bought the engagement ring.

-His wedding band I had to get creative, after all I was in Costa Rica with little to no resources.  We visited a artisans market where a "vendor" had some handmade rings made from coconuts.

-I found a dress online that he picked up for me (yes girls, he went and bought my "wedding" dress.)  It was a simple lace summer dress from Maurices.

-Brett reached out to some LA local pastors through our association and lined all that out.


So, Brett had to pack a wedding day bag for him and myself (first lesson in trust right!?) and got on a plane to LA!

After a trip to target for some last minute wardrobe essentials, we headed to Pasadena.  One of the biggest details our families get a kick out of was the bouquet.  We stopped along side the road and picked wildflowers.  There was a landscape crew cleaning up a flowerbed that allowed us to go through their trimmings!  This is an entertaining detail that I will never forget about that day!

Brett has a cousin who lived in the area.  We met them for lunch then headed to a local park to meet the preacher.  His cousin and her husband were our photographers and witnesses!  Do you see how God had all this planned!?




Do you see the clues that I had arrived back in the country less than 24 hours before?...
1.  Terrible manicure (or lack thereof), the hair (enough said).
2.  The drastic difference in "shine" between the band and the engagement ring (which had been collecting central american dirt for over a month)
3.  The peeking watch tan line that had been developing over the last 4 months
4. Brett's band, made from Costa Rican coconut!
5. At least I covered up the tan lines!!!

After we got married we spent about a week driving back to Arkansas.  I had never been across the southwest states before.   We made stops at the Grand Canyon, Painted Desert, Las Vegas, Hoover Dam and other small parks along the way.

A few weeks after we got home, our families held a reception for us.  They did an amazing job and I loved the decorations...








My mom painted an old coffee table with chalkboard paint and all the kids signed it as a guest book!


Our families gave us really nice journaling bible, which our guests signed and highlighted verses for us in!

On of my favorites is this bouquet my mom made.  It included pins, broaches, and other jewelry from all the women in both Brett and I's families.  It was so neat to see how each piece had a meaning. Some of the pieces included was a necklace Brett's grandma had worn to his high school graduation, & a bible locket that I received the first time I attended Sunday School as a young girl.


I loved writing this and remembering all these special details of our beginning!  I couldn't be more excited for what God has in store for us!

Spring fever!!!

It's the first day of spring! I have been hit with spring fever soooo bad!   I know I'm going to be somewhat miserable when the summer heat hits and I have been soaking up every minute outside possible!  
I had some old pallets piled up and made some quick&easy flower boxes...

I also made some solar sconces to go over a "welcoming garden" at the top of our driveway!



We finally got a new frame built for our greenhouse after it was destroyed by a storm last year.  Can't wait to get some seeds started this week.  
We already have a few potted tomatoes that we will keep here close to the house for easy pre-dinner access!



Our temporary strawberry bed is looking so good and I can't wait to see sweet red berries growing!  Next year I plan to have a more permanent bed set up for them.
I'm trying something new, a Pinterest find, and started some potatoes in a tall trash bin.  We will see how this goes the next couple months.  They first sprouted about a month after I started them.  They aren't tall enough to add the next layer of dirt yet.

We have definitely had some spring-teasing weather lately, with some days in the 80's!  The critters around the farmyard have been feeling it and I believe they to are ready for spring!

the BEST cobbler...

I'm so excited to share this amazing recipe I found!

The last couple months all I have wanted to eat was fruit.  I was getting tired of apples and cuties so in Sams I found some plums.  They were really sweet and juicy, but the container was pretty big and I wasn't eating them fast enough.  I was afraid they were going to go bad before I had a chance to eat all of them.

I decided some kind of cobbler was probably my best chance to use them.  I found a recipe from Joy the Baker  and had to try it!  This will be my new go to recipe for just about any type of cobbler!


Look at the color! Don't they look amazing...

I sliced up the plums, leaving the skins on. They cooked down enough that the skins weren't an issue for me, but my husband ended up eating around the skins.  So if you have a picky "texture eater" around you may want to try skinning your fruit.
Ingredients:
1/2 cup (1 stick) butter
1 cup granulated sugar
1 cup all-purpose four
1 tbsp baking powder
1/2 teas cinnamon
pinch of nutmeg
3/4 cup milk
3 cups fruit (berries, apricots, plum, etc)
1/3 cup firmly packed brown sugar
Direction:
1. Preheat oven to 350.  Melt the butter in a saute pan over medium heat until it bubbles.  Do not burn the butter but allow it to develop brown color
2. Pour the butter into an 8in or 9in square baking dish.
3. In a medium bowl, stir together the gradulated sugar, flour, baking powder and spices.  Add milk and stir.
4. Pour the mixture on top of the melted butter DO NOT STIR.  Arrange the fruit evenly over the batter.  Sprinkle with brown sugar.
5. Bake for 40-45 min until the top turns golden brown.  Serve warm with vanilla ice cream!


The batter will rise through fruit.  If only you could smell it!

Homemade Eggnog

My husband loves eggs and custards,

I don't do custards,
...don't even like the word,
Custard , doesn't sound edible to me!

Anyways, he also loves eggnog, which I can stand a little of! I still remember the first time I ever tried it, I was in a mall with my mom and grandma where one of the vendors was handing out samples. Grandma insisted that I try it.  Funny thing is I don't remember what my original reaction to it was!     

This year I thought I would try making some after he finished off the 2 - 1/2 gallons I had bought.


There were soooo many different versions, using all different ingredients...in addition to the main milk, eggs, vanilla! 


Here is one that I found and slightly adapted...

Non-Alcoholic Eggnog Recipe

3 cups milk
1 cup heavy cream
1/2 cup sugar
4 large eggs
2 teas vanilla
nutmeg

1. Whisk together milk, cream, sugar, and eggs in medium-sized nonreactive saucepan.

2. Cook over low heat, whisking constantly, until the mixture thickens slightly, about 5 minutes.
(be sure not to cook too hot **see below**, and when whisking be sure to keep from sticking to bottom)

3. Mix in nutmeg to taste. Serve immediately or refrigerate. (If it gets too thick with refrigeration, thin with milk)

This is a super simple recipe for excellent homemade eggnog.  I do have a suggestion that might keep you from thinking you failed and dumping it all out...

Control your gag reflex before you read on...

After we refrigerated it and decided it was time to give it a try, there was some, well...
There were small chunks in it...

Totally gross I know.  

Although I did not let it boil, I assumed I did probably over cook it or get it too hot and caused the eggs to begin to set.  

So instead of dumping it down the drain, I just poured it through some cheese cloth, and...






What!? Did you think you would see a festive, perfectly garnished class of nog!? Sorry!!! It didn't last that long!!!

Fun & Eternal; What to pack in your shoe-box and why



As I mentioned before, November was crazy and exciting.

Sometimes I look at our calendar and think, "we over did it," "we should have said no," or "when will things slow down?"

But when I am passionate about something, I want to be involved in it.

Last year while packing our Operation Christmas Child shoeboxes, I was so surprised to discover how many people from our church and community didn't know anything about this amazing ministry.  So the last week before collection week we scrambled to tell people about it and were so greatful that our little church packed over 40 boxes!

Over the last year Brett and I felt God calling us deeper into the ministry, so we signed up as year-round volunteers and became a new relay center, or drop-off location!  We had no idea what this year would be like since there are still so many people in our little community that aren't aware of the difference Samaritan's Purse is making around the world, but mostly that THEY (YOU) can be apart of it!

This November I am thrilled to say that our church more than doubled the number of boxes they packed and we had 250 boxes dropped off, mostly from first time packers.  Now I know that if we are comparing, this doesn't sound like a lot, but y'all, we were ecstatic and can't wait to see what God does next year!!!

Also we will be attending the processing center in Dallas again this year, it was a huge blessing last year and I cannot wait!!!

Soooo, maybe you aren't familiar with the difference you can make with just a shoe box!!!

Here are some ideas to put in your shoe-box, but I am also going to tell you Why they are important, you might notice this list is a little different than a typical kids "wish list!"

School Supplies: notebooks, pens, pencils (don't forget sharpener & erasers), crayons, calculators, safety scissors (yes you can send them), glue sticks (NOT bottled liquid)

For many kids, having school supplies is a requirement to go to school.  If the family does not have money to purchase school supplies, often that means the kids are not allowed to go to school.  Receiving school supplies gives a lot of children the opportunity to attend school that they might not otherwise have!



Hygiene Items: washcloth, bar soap (no liquid), toothbrush, toothpaste, combs/hairbrush, plastic mirror*, chapstick

Many of the shoe-box recipients live in orphanages, where EVERYTHING is shared.  Simply having their own washcloth can mean everything to a child!  Most people in poverty still appreciate cleanliness, they likely just lack the necessary tools. 

*Don't send breakable glass. Although we see a mirror in multiple rooms of every building, a lot of other countries do not have mirrors so prevalent; and having a camera or getting your picture taken cost money.  It is not unlikely that someone in poverty has never seen themselves or know what they look like! 

Trade Tools: (10-14 age) hammer, nails, (no knives) duct tape, compass, flashlight, sewing kit, fat-quarters, crochet hooks/knitting needles, yarn

In many circumstances, some of the financial responsibility falls to the children of the family.  Giving them the tools to learn safe, ethical trades, will help prevent them from falling into slavery traps, & set them up to earn a living for a lifetime!

Clothing: hats/gloves, shoes**, socks, simple outfit 

Something we so easily take for granted! For impoverished children, the clothes they do have are usually already worn out and have been thrown out by someone else.  They won't have many and what they do have will be hand-washed, which wears them out much faster.  Having shoes can prevent foot injuries that would likely become infected.

**a pair of tennis shoes or boots would obviously take up an entire shoe-box, think of other options such as flip-flops, crocs, water-shoes, canvas slip-ons etc.

Other: water bottle, lifestraw 

Clean water is hard to come by in many areas around the world, having a water bottle can allow the child to take more than a single drink, hydration is very important to health! 

Fun stuff: small knick-nack toys, hard candy (no chocolate), hair accessories, coloring book

Every kid needs to feel like a kid!!!



WOW item: stuffed animal, soccer ball, ball cap, doll, musical instrument, 

Any larger item that will immediately catch the child's attention when the box is opened!



Personal Notes: pictures of yourself, letters, about me coloring page, name and address

A personal note to a child is the heart of the box, tell them they are loved, show them someone on the other side of the world is thinking of them! In some cases the children may be able to write back.


DO NOT Send: liquid, weapons, war related items, nail polish, glass or breakable items, high value jewelry or other items, used items, food, medicine, aerosol cans.

Liquid or breakable items, as well as melted candy can damage other gifts in the box and other shoe-boxes, high value items can put the child in danger.

Pray

Pray while you are making selections for your box, somewhere, the child that will receive your shoe-box, is praying for a specific item.  Pray over your box and the child that will receive it.
